Here, in the shadows of the ruins of Pompeii, Garofalo has been making pasta for over 200 years. Garofalo’s Signature line of pastas combines the art and skill of traditional Neapolitan pasta making with the efficiencies of today’s technology to create artisan style pasta products without equal.

The Signature line offers traditional Neapolitan cuts, most of which are created using traditional bronze dies to ensure that the integrity of each cut’s texture is preserved. Garofalo carefully adjusts a separate drying temperature for each individual cut of pasta for optimal texture, aesthetic and performance. Garofalo will make at least 25 quality checks for each cut of their pasta before they allow it to carry the Signature name.

The result? One look at its rich golden color and you can tell this is no ordinary pasta. One taste and you’ll know all of Garofalo's work has been well worth it.
